Peach Meringue

Peach Meringue

Ingredients:

  • 3 large ripe peaches
  • 1/3 cup caster sugar
  • 185 ml (6.20 fl oz) water
  • 1/2 icing sugar
  • 2 egg whites
  • 20 cm (8 inches) cake base
  • 250 g (8.8 oz) strawberries
  • hulled whipped cream

Procedure:

  1. Peel and slice the peaches into half.
  2. In a pan, dissolve sugar in the water and bring to boil for 4-5 minutes.
  3. Reduce heat.
  4. Add peach halves and cook gently for 8-10 minutes.
  5. Beat egg whites until stiff and mix in icing sugar.
  6. Cover an oven tray with greaseproof paper and drop on it 6 large spoonfuls of the meringue mixture.
  7. Pre-heat oven.
  8. Cook the mixture in a pre-heated very hot oven for 4-5 minutes until lightly brown.
  9. Remove meringues from the oven and cool.
  10. Take the peach halves off the syrup.
  11. Cool and arrange on the cake base.
  12. Top each peach with a meringue and put strawberries around.
  13. Chill and serve with whipped cream.
